So I’ve talked about Dreaming Big a lot over the past few months. I first talked about the 5 components of dreaming big HERE.

I then followed it up with thoughts and things that can keep up form dreaming big, the main one being worry.

Today I am going to touch base on highs and low of dreaming big. The YO-YO’s of dreaming big you might say.

The Yo-Yo affect can be tiring, both physically and mentally. Financial burdens can halt the heart of your dream. Self doubt can halt the heart of your dreams. The FEAR of the UNKNOWN (aka Future) can halt the heart of your dreams.

You see, our year has been full of high’s and lows. Last month was a HIGH MONTH. The kiwi cotter raced well, stayed injury free, and we both were plowing through plenty of work, etc. But just like that, things can change. Our life is very much month to month. And since we’re a Team, when one of us is going through a low part of dreaming big( discouraged or frustrated) it’s important for the other one to be just be there, to encourage, to comfort, but at the same time give them time and space. Ya know?

The low will soon fade and you can make your way back up. Working HARD towards whatever dream GOD may have for you. Because HE always has a PLAN for you. One that FAR exceeds our own, even when if we can’t picture it at the moment. Even if we’re “yo-yoing.”

This weekend I made the kiwi his favorite New Zealand dessert. Yo-Yo’s. Quite fitting, isn’t it? It’s not healthy. It’s not going to help with his training. But it did bring comfort. It was made with love. And gosh darn it, sometimes you just need to make a home made dessert so you can scrape the bowl clean and end the day on a HIGH (sugar high)! Gluten Free Yo Yo Recipe (5)

adapted from here.

[print_this]Serves: 6

Ingredients

Cookies

  • ¾ cup butter (i used sweet cream butter)
  • ¼ cup icing sugar (similar to powder sugar)
  • 1 teaspoon vanilla
  • 1 ½ cups GF flour (Bob Redmill’s All purpose Flour)
  • ¼ cup custard powder (see picture below. In international grocery isle)
  • optional: dash of buttermilk or cream**
  • optional: dash od sea salt**

Custard/Butter Filling

  • 50 g butter , softened
  • ½ cup icing sugar
  • 2 tablespoons custard powder
  • 2 tablespoon coconut cream**

** are my additions. If you can’t find the custard powder, try using vanilla cream pudding mix.

Instructions

  1. pre heat oven to 180 degrees C or 375F. First beat your butter and icing sugar until smooth and fluffy. Takes a while. Then add in vanilla and optional milk.
  2. Second, slowly combine (or sift) flour and custard powder together, then fold into the creamed mixture while beating. Make sure it’s nice and doughy. I used a beater (mixer) then mixed with my hands.
  3. Roll dough into balls and place on cookie sheet. Flatten with a floured fork and bake for 15-20 minutes. While cookies cool, make filling. Just beat all ingredients together until smooth. Whip with fork to make extra fluffly. When the cookies are cooled, then sandwich together in pairs with the butter custard filling.
  4. I let them sit in the fridge for 20 minutes so that the filling can set. THEN EAT![/print_this]

There will always yo-yo’s in life when you are reaching toward a BIG DREAM. And every big dreamer needs someone to be their yo-yo partner through it. To PULL them back up when they are down, then switch roles (if need be). It can be a spouse, a family member, a friend, etc. Someone that can bring comfort right when you need it.

Dreaming Big means living and sharing every emotion, yet keeping FAITH through it all.

What’s your favorite comfort food to make for others or to eat for yourself?

Bob was just asking (okay, sorta begging) me to make some GF chocolate chip cookies. I need to hunt down a good recipe and make this for him. He’s been feeling a bit deprived when he constantly has to turn down offers to try baked goods at restaurants and get-togethers. I’ve been putting it off . . . busy with other things . . . but this post reminded me that I need to do this for him. Offer a little comfort. 🙂

My comfort food…homemade pizza for sure!

  13. Gluten Free Yo Yo Recipe (38)Amanda @runtothefinish

oddly, I still think ordered pizza is a big comfort food. I rarely to never have it, but it’s certainly tied to A LOT of childhood memories and always makes me feel warm and fuzzy. Taking life month by month is still very new to me, but I’m learning how to be ok with it.

Recently, my life has taken a course I never thought would happen. I am dealing with a health issue that has stopped me in my tracks. My dreams and daily life has changed, and now I am just trying to manage not only the health issue and the pain associated with it, but my feelings, and the reality that my life might take a completely different course than I had envisioned. I surprisingly OK with it all.

My favorite thing to do is bake for my kids and husband, and I have been doing it like crazy for them lately since I am unable to run.

FAQs

What is the trick to gluten free baking? ›

Gluten-free flours often contain fine starches, so they absorb more liquid than conventional flour. To address this, gluten-free recipes usually call for more liquid and produce looser batters. They may also call for a larger quantity of leavening, like baking powder, to help add volume and lighten the texture.

Why are gluten-free cookies gritty? ›

Gluten-free baked goods have earned the reputation of being dry and gritty. That grit—that evil grit! —is the result of gluten-free flours that are often high in starches and rice flour, which take longer to absorb moisture than regular “gluten” flour.

Can I use regular flour instead of gluten-free? ›

The simple answer to this question is yes BUT don't expect the same results! Gluten free flours often contain lots of water grabbing gums and starches so we have to ensure that there is enough water present to fully hydrate the gums and gelatinize the starches.

Why is my gluten-free cake gummy? ›

Gluten-free baked goods often benefit from extra liquid to hydrate the flour blends, eliminate grittiness, and achieve a less dense or dry texture. However, it's very important to drive off this extra moisture during baking, or you'll wind up with a gummy texture.

Which flour has no gluten? ›

For flours that are made from grains (amaranth, buckwheat, corn, millet, quinoa, rice flours, sorghum, and teff), always buy them labeled gluten-free, since many are grown, harvested and processed in facilities that also manufacture wheat, barley, or rye and cross-contact can occur.

Do you bake differently with gluten free flour? ›

One of the first rules of gluten-free baking is managing your expectations; traditional baked goods lean on gluten for their texture and rise. Replicating this is challenging and the results might not be identical, but it can get pretty close with the right flours.

How do you make gluten free baking taste better? ›

Flavor. New bakers should try adding extra vanilla and/or spices to recipes. Gluten-free flours often have unique tastes, and adding additional flavoring to recipes will help cover up these unfamiliar flavors.

How do you make gluten-free cookies less dry and crumbly? ›

Add extra liquid: Gluten-free flours tend to absorb more liquid than regular flour, so you may need to add more liquid to your recipes to compensate. This can help to keep your baked goods moist and prevent them from becoming dry and crumbly.

Which gluten free flour is the least gritty? ›

Cassava flour is mild in flavor and provides a light texture to baked goods. It's also very absorbent and pairs well with brown or white rice flour to add structure without too much grittiness.

Does sourdough bread have gluten? ›

Sourdough is not gluten free, but we know that many people with IBS, gluten intolerance, or gluten sensitivity can tolerate sourdough bread. This is because the methods used to make sourdough break down some of the gluten in the flour so it is easier to digest. Think of sourdough as low-gluten rather than gluten-free.

Does oatmeal have gluten? ›

Yes, pure, uncontaminated oats are gluten-free. The U. S. Food and Drug Administration considers oats a gluten-free grain under its gluten-free labeling regulations and only requires that packaged products with oats as an ingredient contain less than 20 parts per million of gluten overall.

What is the closest gluten free flour to all-purpose flour? ›

Gluten-Free Bread Flour can be swapped 1:1 for all-purpose flour and bread flour by both weight and volume.

Should I let my gluten-free cake batter rest before baking? ›

Let Your Batters & Doughs Rest

We recommend covering your batters and doughs and letting them rest for at least half an hour. Note: This will also help batters become thicker and doughs to firm up.

Do I need xanthan gum for gluten-free baking? ›

Xanthan Gum adds thickness and viscosity to gluten-free breads and other baked goods. Without xanthan gum, your gluten-free baked goods would be dry, crumbly and flat. Because xanthan gum is gluten-free and vegan, it's the preferred thickener for those home bakers with food allergies.

Why do my gluten-free muffins fall? ›

It's very common for gluten free baked goods to sink in the middle and sometimes it's even gummy or looks like it isn't fully cooked. Here's some ways to help avoid that: -Don't over-mix your dough. Mix it until everything is just incorporated and be done.

What are the challenges of gluten-free baking? ›

Owing to the challenge of gluten-free flours to form a protein network that provides structure and strength to dough, breads produced in the absence of gluten tends to be flatter, denser, crummier, less chewy and less tasty.

Is it harder to bake with gluten free flour? ›

Gluten-free baking is a lot harder than traditional baking because gluten protein is what gives baked goods their structure.

What are the rules for gluten-free cooking? ›

When cooking gluten-free, there are two important things to remember:
  • Be sure to read all ingredients label to ensure you are not accidentally using a product that contains gluten. ...
  • Make sure that you are not causing cross-contact by using foods, utensils and other cookingware that has been contaminated by gluten.
