If you love coconut and chocolate, then you should make keto earthquake cake! It has a coconut pecan crust and cream cheese swirl. It’s a super-rich cake that tastes like a candy bar.
What Is Earthquake Cake
The name earthquake cake came from imagining what a German chocolate cake would look like if it endured the shaking and rocking of an earthquake! Instead of on top, the nuts and coconut flakes are on the bottom, like a crust.
Swirls of cream cheese spread throughout the cake, making it look mottled and “shook.”
If you search for traditional earthquake cake recipes, the amount of sugar or carbs might surprise you! One recipe I found has 338 calories and 44 grams of carbs in just one slice.
Thankfully, it’s really easy to turn this into a low-carb recipe.
Keto Earthquake Cake
If you’ve made my keto pumpkin donuts – or any other type of low-carb dessert – then you probably already have almost everything you need!
I used mostly easy-to-find pantry staples in this cake. To keep it keto-friendly, I used almond flour instead of all-purpose flour, and Swerve confectioner’s sugar substitute to sweeten it without sugar.
Whenever you bake keto desserts, make sure you use sugar-free ingredients. The almond milk in this cake should be unsweetened. You should also use full-fat dairy products – like the cream cheese.
High-Protein Cake
To give this cake a better texture and nutrition profile, I added a scoop of vanilla protein powder. You could use chocolate protein powder instead – especially if you want this cake to have a deeper, richer chocolate taste.
Honestly, almost any flavor of protein powder will work in this cake. I used vanilla because it has a flavor that fades to the background so the other ones (coconut, cream cheese, chocolate) stand out.
Keto Chocolate Cake
Serve this keto cake at a birthday party, baby shower, or holiday party. No one will be able to tell that it’s a sugar-free or keto-friendly cake.
If you have any leftovers, store them in an airtight container in the refrigerator for up to three days.
Coconut Pecan Cake
Coconut is a fantastic thing to eat on a keto diet because it is so high in healthy fats. But did you know that coconut is also really high in selenium? This is an antioxidant that protects your cells from oxidative stress.
Pecans are also really good for you too. They are a good source of calcium (for your bones), and potassium (for heart health).

Ingredients:
Almond flour
Vanilla protein powder
Vanilla
Eggs
Cream cheese
Pecans chopped
Unsweetened cocoa powder
Baking powder
Baking soda
Unsweetened coconut flakes
Swerve confectioners sugar substitute
Keto chocolate chips
Melted butter
Almond milk
Instructions:
Preheat the oven to 325 degrees, and spray a 9×13 baking dish with baking spray.
In a mixing bowl, combine the almond flour, protein powder, vanilla, eggs, cocoa powder, baking powder, baking soda, 1 cup of the Swerve, almond milk and half of the melted butter. Blend until smooth and fluffy.
Mix together the coconut flakes and pecans in the bottom of the baking dish.
Spread the cake batter over the coconut and pecans.
In a bowl, beat together the remaining butter, cream cheese and ⅓ cup of Swerve until smooth and creamy.
Drop spoonfuls of the cream cheese mixture on the cake, and use the top of a knife or tines of a fork to swirl it into the batter.
Top the cake with the chocolate chips and bake for 45-50 minutes until cooked through.
Let cool before serving.
