You know the best and worst thing about mini desserts? Well, the best thing is that they are “mini” and they are typically just so darn cute. The worse thing is that because they are miniature it is easy to eat more than one and think that you are still cutting calories or they are not that bad for you. With that in mind, I guess it is safe to say that I ate two of these Mini Apple Crostatas and they both had a dollop of vanilla ice cream on them. Hey, don’t judge me! I promise once you make them you are going to see how easy it is to eat these babies. You know, there is a rational explanation for eating two of these Mini Apple Crostatas. The reason is breastfeeding.

Let me tell yall something, breastfeeding is hard work. I totally understand how a woman’s body can burn nearly 1000 calories just breastfeeding. Think about it. My body is creating sustenance for another human being. Within that sustenance, there is vitamins, minerals, and antibodies that my body is passing along for this other person to have during feeding times, which occurs 6-8 times a day! That is hard work! Because of that hard work I am extra hungry, extra thirsty, and sometimes extra tired (but that could be due to inconsistent sleep). My husband can not believe the appetite I have but after explaining to him what is happening with my body, he understands…I suppose. I can eat two of anything, anytime, anywhere. Especially now that I am feeding my little (LO).


Speaking of feeding my little one, we are on the cusp of starting to feed our little boy food and I am so excited. Not only am I excited about feeding him baby food, I am excited about introducing him to food…period. I have visions and ideas of taking my little boy to farmers markets and international food stores to introduce him to different fruit, vegetables, and meats for his try. I was kind of brought up the same way. My grandmother had an apple tree in the front of her house and every season we would pick apples together and she would give me a big brown grocery bag of them to take home. I wonder if she knew about Apple Crostatas back then? Anywho, I want my son, AKA L.O., to have the same experience of picking fresh ingredients and making something delicious with them with him momma. One of the first things we are going to do makes these Mini Apple Crostatas.

Description

This Mini Apple Crostatas Recipe is perfect for small dinner parties, appetizers, or a treat! Fill with sweet and tart Granny Smith apples and serve with ice cream!

Ingredients

  • 45 Small Granny Smith apples, peeled and sliced
  • 6 tbsp. Butter, divided
  • 1 tbsp. Sugar
  • 2 tbsp. Lite brown sugar
  • ½ tsp. Cinnamon
  • ¼ tsp. All-spice
  • 2 tsp. Vanilla extract
  • 2 pre-made pie crust sheets
  • 4 tbsp. Caramel sauce
  • Coarse white sugar

Instructions

  1. In a medium saute pan on medium heat, melt 5 tbsp butter. Add the apples and cook for 7 minutes until the apples become soft. Add both sugars and the cinnamon. Cook for another 5 minutes. Remove from heat and add the vanilla extract.
  2. Turn the pie crust onto a lightly floured surface and cut out 4 round circles using the circumference of a small bowl. You can make more if you want them smaller. Place the pie crust on a silicon mat or parchment paper and spoon 2 tablespoons of the apples in the center of each pie crust circle leaving about room around the edges to fold. If you are making them smaller, use only 1 tablespoon of apple filling.
  3. Fold the exposed edges of the pie crust overlapping the crust making a pocket. Once the pies are assembled brush the edges of the crust with the tablespoon of butter and sprinkle with white coarse sugar and bake for 20-25 minutes in a preheated oven of 350 degrees. The crusts should be golden brown. Spoon a tablespoon of caramel sauce in the tarts and serve with ice cream.
