Why You’ll Love Flatbread Breakfast Pizza

Flatbread pizza is my favorite way to enjoy pizza when I don’t have much time to prep, it’s one of my go-to easy recipes.

It’s much simpler than making it from scratch with homemade pizza dough, better tasting than frozen, and quicker than delivery.

Store-bought naan bread is a perfect pizza crust – it crisps up nicely, holds the toppings well, and is on the table in less than 20 minutes.

For this flatbread breakfast pizza, I used naan flatbread brushed with olive oil and sprinkled with garlic powder. I topped that with fresh mozzarella cheese, sliced cherry tomatoes, prosciutto, and egg. But the great thing about homemade pizza is that you can choose any favorite toppings you like.

Try crispy bacon, leftover ham, or crumbled sausage if you don’t have prosciutto. We also like adding red onions, bell peppers, green onions, and avocado slices. As far as cheese, we’ve used cheddar, swiss, gouda, parmesan, and feta cheese.

And if you don’t have naan, you can use any form of flatbread you like; pita bread and store-bought pizza crust also work perfectly. It just comes down to what’s in the refrigerator.

Ingredients & Substitutions

Store-bought naan flatbread – I used regular naan in this recipe, but whole wheat naan would also be great. If you don’t have naan, you can use any form of flatbread, such as pita bread or store-bought pizza crust.

Extra virgin olive oil – I like adding a little olive oil to my crust with a sprinkle of garlic powder. I find that this is enough to add flavor and moisture without any other sauce needed. However, these little pizzas are also great with other sauces such as pesto, garlic sauce, or tomato sauce.It would also be delicious with homemade cherry tomato pizza sauce.

Garlic powder – I like to add a bit of garlic powder to my breakfast pizza, you can also add onion powder, chili flakes, or herbs such as dried basil and oregano.

Shredded mozzarella cheese – Shredding your cheese at home will give you the smoothest, meltiest cheese and the best-tasting pizza, but this recipe works ok with re-shredded cheese if that’s all you have. You don’t have to stick with mozzarella either, try adding cheddar cheese, feta, shredded gouda, or fresh parmesan cheese.

Prosciutto – Prosciutto is a thin, salty ham that crisps up nicely when baked, it has a ton of flavor and adds a nice texture to the pizza. Try crispy bacon, crumbled breakfast sausage, or leftover ham if you don’t have prosciutto.

Cherry tomatoes – Cherry tomatoes add a sweet burst of flavor and are less acidic than larger tomatoes such as beefsteak or romas. You can dice one of the larger tomatoes if you prefer. You may want to add other vegetables such as chopped bell peppers, onions, mushrooms, or any quick-cooking veggie you choose.

Eggs – For best results, choose large-size eggs. You can also use small or extra-large eggs, but you will need to adjust the cooking time to get the perfectly cooked egg you are after.

Baby arugula – Arugula is great for pizzas because of its bright green leaves and slightly peppery flavor. You want to add this as a garnish after the pizza is cooked to preserve the freshness. Other great garnish options are baby spinach, fresh chives, sliced avocado, and other fresh herbs such as cilantro and basil.

Step by Step Instructions

Place naan flatbreads on a baking sheet and drizzle each with olive oil. Sprinkle each flatbread with garlic powder.

Add shredded cheese to the top of each naan bread, using the cheese to make a well for 1-2 eggs in the center of the pizza. This helps keep the egg whites from running off the side of the bread.

Scatter the cherry tomatoes, prosciutto, and other toppings on the pizza, leaving the middle of each well open for the egg.

Carefully place an egg into the middle of each well.

Bake the pizzas for 8-12 minutes until the egg whites are set, and the egg yolk is cooked to your preference.

Pro tip – The best way to add the eggs is to crack them separately into a small bowl and then tip them from the bowl to the top of the pizza.

Remove the pizzas from the oven and sprinkle the top of each pizza with a pinch of red pepper flakes (to taste) and a handful of baby arugula leaves.

Top Tips & Tricks

  • If possible, use freshly shredded cheese, not only will it melt better, but it will taste better, too.
  • If adding bacon or sausage, ensure you use precooked, as the quick cooking time for the eggs will not be enough to cook the meat fully.

Serving Suggestions

These egg pizzas are a tasty breakfast or brunch without the need to add a lot of sides. We generally eat them on their own.

However, if you are doing a large brunch spread, you may want to add other dishes to go with your breakfast flatbread. We like to serve them with air fryer breakfast sausages, twisted bacon, or crispy air-fried turkey bacon.

Add more to the brunch table with waffle French toast, homemade crepes, or easy homemade pop tarts.

Storing Leftovers

You can store leftover breakfast flatbread pizzas in the refrigerator for 2-3 days.

Allow the leftover pizza to cool completely, then wrap it tightly in plastic wrap or store it in an airtight container.

Breakfast pizza can be reheated in the microwave. You can also reheat it in the oven at 350°F for 5-7 minutes or an air fryer at 320°F for 3-5 minutes.

However, reheating will cook the yolk of the egg further and may result in a fully cooked yolk.

  • 2 pieces naan flatbread
  • 1 teaspoon olive oil

  • 6 ounces mozzarella cheese shredded
  • 2 slices prosciutto sliced
  • 10 cherry tomatoes halved
  • 2-4 large eggs
  • 2 ounces baby arugula

Instructions

  • Preheat the oven to 450°F.

  • Place the flatbreads on a baking sheet, and drizzle each one with half a teaspoon of olive oil. Sprinkle each flatbread with garlic powder.

  • Add shredded cheese to the top of each flatbread, using the cheese to make a well for 1-2 eggs in the center of the pizza.

  • Place the cherry tomatoes and prosciutto on top of the pizza, leaving the middle of each well open for the egg.

  • Carefully place an egg into the middle of each well.

  • Put the sheet pan on an oven rack in the top third of the preheated oven. Bake the pizzas for 8-12 minutes, until the egg whites are set and the egg yolk is cooked to your preference.
